Wednesday - nothing Thursday - crock pot

Drake & I had peanutbutter sandwiches & an apple for dinner. Brad had a chicken salad sandwich & Drake had some of that too.
I've got the chicken & stuffing in the crockpot now though, so I know we are having that for dinner tonight.
Not sure about tomorrow. We have company coming for the NYE party but I don't knwo when they will get here. Do I need to make a big dinner? Should we just get pizza?

Tuesday - pasta

We had spaghetti with the last of my mom's special recipe sauce (aka Ragu). Plus half a loaf of PF cheese garlic bread.

Not sure what we are going to have tonight. I forgot to defrost chicken for the crock pot. So I was going to make the braciole but we used the last of the tomato sauce with the pasta.

Maybe it's a taquitos & Campbells soup kinda night.

Moday - soup

the soup was delicious & ther was enough left over for me to have some for lunch this week. Pity it was gourmet mix, because I can't afford to have it more often. I may do a search online for it though& see if I can find a recipe & then stock up on canned artichokes when they are on sale.

I was going to do crock pot chicken for dinner tonight but forgot to defrost the chicken. So it's either pasta or braciole tonight.

Xmas Dinner

Everything turned out great!

Roasted the beef at 250, took about 3 hours for 3.5lbs of beef. Last 20minutes at 300 & then once it reach 133 degrees I gave it 10 minutes at 400. Came out perfect. Rested for 15 minutes & reached 141 interal temp. Gave it a mustard coating before cooking. It took about an hour or so longer than I expected.

Roasted veggies at 250 for 15 minutes, 300 for 20 mintues and 400 for 20 mintues. Came out great too. Veggies were sweet potato, potato, carrot & parsnip. Served garlic aoli with them.
Made peas with proscuitto & nuked some corn. Did not get the cornbread made

Had just a bit too much roasted veggies but everything else came out perfect portions. I feel very good about it

Xmas Breakfast

Good but needed more peaches. Also I remembered later that the butter & brown sugar need to be simmered together to make a syrup & I failed to do that. I think it should have cooked at a higher temp that it did. maybe 375

Xmas Eve

We had baked penne for dinner. It needed more sauce but I misjudged the cups thing. I've got the breakfast French toast casserole already in the fridge. The rib roast has been dry aging for 2 days now & looks good. It hasn't gone grey or green anyway. I'm going to give it a mustard crust this time & roast it at 500 & then at 250 until it is 140 inside. everytime I have done it to 135 it comes out too rare. I've got to peel & chop up th eroot veggies for the roasted veggie part of the meal & then put them in about 20 minutes before the roast is done. That should be interesting since I don't know how long the roast will actually take. Then I have to turn the veggies up to 400 & cook them another 30 minutes, along with the corn bread. Plus I have to make the peas & proscuitto & then nuke some corn. I've never cooked so much of Xmas dinner before. It will be interesting to see how it turns out. We also have snacky stuff for this evening & tomorrow night - cheese, crackers & sausage.

Monday - casserole

Sausage & noodle casserole.

Not the best use of that sausage. Maybe try it with thin spaghetti & a touch of pesto or just oil. Maybe on a pizza

in no particular order Mon-thur. We go out to eat on Friday. Sat or Sun we will probably have pizza. Not sure about the other day.

Why?

I created this blog to help me keep track of what is for dinner. A pencil & notebook would no doubt be more efficient but I get on the computer after dinner every night & am much more likely to update this site than write things down.

I am hoping to expand my cooking scope.
