Xmas Eve

We had baked penne for dinner. It needed more sauce but I misjudged the cups thing. I've got the breakfast French toast casserole already in the fridge. The rib roast has been dry aging for 2 days now & looks good. It hasn't gone grey or green anyway. I'm going to give it a mustard crust this time & roast it at 500 & then at 250 until it is 140 inside. everytime I have done it to 135 it comes out too rare. I've got to peel & chop up th eroot veggies for the roasted veggie part of the meal & then put them in about 20 minutes before the roast is done. That should be interesting since I don't know how long the roast will actually take. Then I have to turn the veggies up to 400 & cook them another 30 minutes, along with the corn bread. Plus I have to make the peas & proscuitto & then nuke some corn. I've never cooked so much of Xmas dinner before. It will be interesting to see how it turns out. We also have snacky stuff for this evening & tomorrow night - cheese, crackers & sausage.
